Yabby Lake Vineyard Single Vineyard Pinot Noir is grown at the winery's Mornington Peninsula estate. The vines, a mix of multiple Pinot Noir clones, grow in sandy clay loam soils over iron shot stone.
The handpicked fruit is destemmed and transferred to open fermenters with a portion of whole bunches. During fermentation the wine sees two weeks of skins contact and hand plunged up to three times daily.
The wine is then pressed into new and seasoned French oak puncheons to complete malolactic fermentation. After maturing for 11 months, the wine is bottled without fining and only light filtration.
Deep crimson, Yabby Lake Vineyard Single Vineyard Pinot Noir is finely structured with pure red berry flavours, silky texture and sustained length. Cellaring potential is 10 years.
